    A Brief History of 

    Indian Cuisine

    The Indian cuisine is one of the most exotic varieties among the various world cuisine cultures and the South Indian cuisine is one that is notable among all the Indian variety. All those states in the Indian sub-continent which lie in the south of the Vindhyas are commonly known as the south Indian states and these are Kerala, Tamilnadu, Pondicherry, Karnataka, Andhra Pradesh and Telangana.

    A very common thread among these states is the fact that all these states have a shore line embracing the Indian ocean on one side and the Arabian sea on the other. Another fact that makes the South Indian cuisine unique is the fact that most of the spices that India produces are from these states and these are mostly referred to as the “hill produce” as a vast majority of these spices are cultivated in the hilly terrains of south India.

    Influence of Weather

    Another common thread that unites these south Indian states is the climate, these states have climates which are vastly tropical in nature and it is natural that the cuisine is also suited to the climatic conditions present in this part of the country. With hot and humid conditions in the summer the rains can be equally abundant and these have determined the cuisine to a large extent, with the advent of the British rule in India these spices have become so popular across the world so has been the south Indian Cuisine.

    The Breakfasters

    One of the most common breakfast items that is uniquely south Indian and is part of any South Indian breakfast menu remains the Idly. The idly is steamed out of batter that is made from parboiled rice and lentils which are soaked overnight, the fermentation process breaks down the starches and hence they are easily digestible by the body and is easily one of the safest breakfast options in the world.

    Dosa is a pancake type dish made from batter that is made from rice and black gram which is also soaked overnight and is part of any traditional south Indian breakfast. Both the dosa and Idly go along well with any side dish such as the chutney (made from grated coconut) and sambar.

     

    Apart from the above there are many other common breakfast dishes which are very regional in nature such as the Upma, Idiappam, appam, parotta, puttu etc which are also equally popular however the dosa and idly are unquestionable kings on the breakfast table.

    Lunch

    Lunch sees a very wide variety of items being served however the sambar and the rasam remain the most common among vegetarian cuisine and is a dish that has various versions across the various south Indian states. For example, the rasam and sambar made in Karnataka would be a bit sweet as compared to those made in other parts of south India, at the same time the same made in Andhra / Telangana would be spicy. There are many other dishes which form part of the lunch menu and these would vary within the states of south India and at times within the state. The kalan is a dish made in kerala which is an indispensable part of any sadhya ( a sumptuous spread of dishes for lunch mostly served in plantain leaf) is made with curd and has veggies such as yam / plantain (raw) in use in them, this dish would have a different concoction in North kerala and different one is south kerala however the basics of the dish remains the same. The hyderabadi biriyani is a notable lunch item which has its origin from the Persian region and has withstood the test of time and now is unique lunch item by itself.

    Dinner

    All states have a sumptuous dinner which is never a fixed one like the breakfast or the lunch, it could range from anything like the dosa / idly to rice or even gruel (known as kanji in Malayalam or tamil). There could be many exotic powders, chutneys that could go along with these making it a wholesome and nutritious dinner.
